Champagne Julep
Ingredients
- 0.5 oz Gilles Brisson VSOP
- 3 oz champagne or other dry, sparkling wine (Skull Wines Sparkling)
- 0.5 oz simple syrup
- 1 dash bitter cube all day bitters
- 6 mint leaves
METHOD
- In a julep tin or rocks glass, add mint leaves and simple syrup (or sugar cube and a splash of water). Gently press mint leaves with a muddler to release oils.
- Add cognac, champagne, bitters and crushed ice and stir gently.
- Top with more crushed ice to mound.
- Garnish with a mint bouquet and lemon peel.
